Diary Free Suga’ Banana Soft Serve, Banana Brulé, Local Edible Flowers, Bee Pollen serves 4
Disclaimer- To make this dish you will need a decent blender. I use a Kitchen Aid one. This also requires some planning as the key ingredient needs to frozen overnight. This recipe is filled with simple ingredients and is more about technique. A pastry torch will be needed for the optional topping. 7 firm but ripe organic seasonal bananas
1 cup milk of your choice. (I use oat or whole organic milk)
4 tsp organic agave
¼ tsp cayenne pepper
1 tsp cinnamon
1 tbsp turbinado sugar (optional)
Bee Pollen, local flowers for garnish
Peel and evenly slice 6 bananas. Reserve one for the optional topping. Lay each slice on a small tray that fit flat into your freezer. Freeze thoroughly overnight.
About 1 hr. before serving place your blender cup into your refrigerator. Also place your milk into the freezer to chill but not freeze. (The goal is to have everything as cold as possible)
Working in 2 batches add half the ingredients to the blender and blender until smooth. (It should be the consistency of creamy ice cream)
Serve immediately.
-To add the optional brulé banana, fan 4 to 5 slices and sprinkle with the sugar. Using a torch brown the sugar until you get a glassy shattering layer of melted sugar. Place atop the soft serve with some edible flowers and serve.
